Healthy Breakfast and Coupon For FREE Yogurt
We go through a lot of yogurt in our household. I throw it in smoothies with frozen fruit, eat it for breakfast with granola and fresh seasonal fruit, and eat it as a healthy snack after a workout. Try my favorite Tropical Homemade Granola recipe over yogurt for breaky this weekend. I'll admit to being a bit of a yogurt snob. I really prefer European style yogurts, especially thick and creamy Greek yogurt. |
3 cups old fashioned rolled oats
3/4 cup macadamia nuts
1/4 cup walnut pieces
1/2 cup shredded coconut
1/4 cup flax seeds
2 tablespoons vegetable oil
1/2 cup agave syrup, maple syrup, honey, or a combination
1 cup dried tropical fruits, such as pineapple, mango, papaya
Preheat oven to 325 degrees F. Line a large rimmed baking pan with parchment paper.
Toss oats, nuts, coconut, and seeds in a large bowl. Stir oil and syrup or honey in a smaller bowl. Then pour over oat mixture and stir until coated. Bake until golden brown 30-45 minutes, stirring occasionally. Let cool completely. Granola will get crunchy as it cools. Stir in fruit.
